  • 1/2 cup softened butter
  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg
  • 2 tsp Butter vanilla emulsion
  • 2 & 1/3 cups flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 package instant vanilla pudding mix
  • 1/2 cup milk
  • 4 oz Cool Whip
  • 1 medium banana, chopped
  • Nilla wafers (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy. Add egg and Butter vanilla emulsion; mix until well combined.
  3. In another bowl, whisk together flour, salt, and baking powder. Gradually add to the wet mixture until fully blended.
  4. Line a baking sheet with parchment paper. Drop tablespoon-sized portions onto the sheet with space in between.
  5. Bake for approximately 8 minutes or until lightly golden on edges.
  6. While cooling, prepare the topping by whisking together instant vanilla pudding mix and milk until thickened, then fold in Cool Whip.
  7. Once cookies have cooled completely, top each with banana cream mixture, garnish with chopped bananas and a Nilla wafer.
