  • 8 oz jar roasted red peppers, drained and cut into strips
  • 1 cup mixed olives, green and kalamata
  • ½ medium white or red onion, sliced
  • 2 Tbsp olive oil
  • 1 Tbsp honey (or monk fruit sweetener)
  • 1 lemon, juiced
  • 6 garlic cloves, finely chopped
  • 1 Tbsp fresh oregano, chopped
  • 1 Tbsp fresh parsley, chopped
  • 1 Tbsp fresh thyme
  • ½ tsp black pepper
  • ¼ tsp salt

Instructions

  1. Sear chicken thighs in a skillet with olive oil over medium-high heat until golden brown (about 5 minutes per side). Transfer to the crockpot.
  2. Add roasted red peppers, olives, and sliced onion around the chicken.
  3. In a mixing bowl, whisk together olive oil, honey (or sweetener), lemon juice, garlic, herbs, salt, and pepper; pour over chicken.
  4. Cover and cook on high for 3-4 hours or low for 6-8 hours until chicken reaches an internal temperature of 185°F.
