  • 1 large yellow onion (diced)
  • 1 cup carrots (thinly sliced)
  • ¾ cup celery (diced)
  • 4 cups low sodium chicken broth
  • 2 (15 oz) cans cannellini beans (drained and rinsed)
  • 2 (15 oz) cans crushed tomatoes
  • 1 (16 oz) box of ditalini pasta (uncooked)
  • Freshly grated Parmesan Reggiano for serving

Instructions

  1. In a large skillet over medium heat, cook turkey bacon until crispy. Drain and finely slice before adding it to the slow cooker.
  2. Add diced onion, sliced carrots, diced celery, salt, black pepper, minced garlic, dried thyme, dried basil, dried parsley, tomato paste, crushed tomatoes, cannellini beans, chicken broth, and water into the slow cooker. Stir well.
  3. Cover and cook on low for 7–8 hours or high for 4–5 hours. About 30 minutes before serving, stir in the ditalini pasta.
  4. Once cooked, serve hot topped with freshly grated Parmesan Reggiano.
