  • 170 g digestive biscuits
  • 100 g melted butter
  • 900 g softened cream cheese
  • 200 g caster sugar
  • 160 g sour cream
  • 1½ teaspoons vanilla extract
  • Pinch of salt
  • 4 large eggs (lightly beaten)
  • 50 g granulated sugar (for caramelizing)

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. For the crust, mix crushed digestive biscuits with melted butter and press into a springform pan. Bake for 10 minutes and let cool.
  3. In a mixing bowl, beat softened cream cheese and caster sugar until smooth. Add sour cream, vanilla, and salt. Gradually mix in beaten eggs until combined.
  4. Pour the filling over the cooled crust and bake in a water bath for about 60 minutes until set but slightly jiggly.
  5. Cool completely before refrigerating for at least four hours. Sprinkle granulated sugar on top and use a kitchen torch to caramelize.
