  • 1 pound cubed chicken breast
  • 1 cup cubed pineapple
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • For garnish: green onions and sesame seeds

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the cubed chicken and cook until golden brown (6-8 minutes). Remove chicken from the pan.
  2. In the same skillet, sauté onion, garlic, and red bell pepper until softened (about 5 minutes). Stir in pineapple and cook for another 2 minutes.
  3. Add jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
  5. Return cooked chicken to skillet and mix well. Garnish with sliced green onions and sesame seeds before serving.
