  • 500g gnocchi
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 28oz can crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup heavy cream
  • 5oz baby spinach
  • 1/2 cup grated Parmesan cheese
  • Dried oregano, to taste
  • Dried basil, to taste
  • Salt, to taste
  • Black pepper, to taste
  • Red pepper flakes, optional

Instructions

  1. Bring a large pot of salted water to a boil. Cook the gnocchi according to package instructions until they float; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped onion until softened (about 5-7 minutes).
  3. Add minced garlic; cook for another minute until fragrant. Stir in tomato paste and cook for 1-2 minutes.
  4. Pour in crushed tomatoes and season with oregano, basil, salt, black pepper, and red pepper flakes. Simmer on low for at least 15 minutes.
  5. Remove from heat; stir in heavy cream and Parmesan cheese until smooth.
  6. Add fresh spinach and stir until wilted (1-2 minutes).
  7. Combine cooked gnocchi with sauce; toss gently to coat.
