  • 2 cups butternut squash, peeled, seeded, and cubed
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/2 lb turkey sausage, crumbled
  • 4 garlic cloves, minced
  • 6 oz spinach
  • 1 cup heavy cream
  • 1/3 cup Parmesan cheese, shredded
  • 8 oz farfalle (bow tie pasta)

Instructions

  1. Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for about 25 minutes until tender.
  2. Boil salted water in a large pot and cook farfalle according to package instructions until al dente. Drain and set aside.
  3. Heat another tablespoon of olive oil in a skillet over medium heat. Add turkey sausage; cook until browned. Stir in minced garlic during the last minute.
  4. Add spinach to the skillet; stir until wilted. Mix in heavy cream, Parmesan cheese, roasted butternut squash, cooked pasta, and additional salt if needed. Combine well.
  5. Serve hot garnished with extra Parmesan or cracked black pepper.
