  • 1 cup diced potatoes (peeled or unpeeled)
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese
  • Sliced green onions for garnish
  • Extra shredded cheese for garnish
  • Crushed tortilla chips for garnish

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked.
  2. Add diced onion and minced garlic; sauté until fragrant.
  3. Stir in beef broth, canned tomatoes (with juice), corn, black beans, diced potatoes, and spices.
  4. Bring to a boil; reduce heat and simmer for 20-25 minutes.
  5. Stir in heavy cream or half-and-half and shredded cheese until smooth.
