  • 4 boneless, skinless chicken thighs (or breasts)
  • 2 cloves garlic (minced)
  • ½ cup sun-dried tomatoes (drained and thinly sliced)
  • 1 cup chicken stock
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 tbsp cornstarch
  • Fresh basil leaves (chopped)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the chicken thighs for 2-3 minutes on each side and season with salt and black pepper. Remove from skillet.
  2. In the same skillet, sauté minced garlic, Italian seasoning, oregano, red pepper flakes, and sun-dried tomatoes until fragrant.
  3. Pour in chicken stock and heavy cream, then mix in grated Parmesan cheese. Whisk in cornstarch until smooth.
  4. Return chicken to the skillet, cover with sauce, lower heat, and cook for 15-20 minutes until fully cooked.
  5. Stir in fresh basil before serving warm.
