  • 12 oz package of cranberries (or equivalent cranberry sauce)
  • 1 cup sugar
  • 3/4 cup water
  • 2 cups flour
  • 1 cup sugar (for crust)
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup butter (room temperature)
  • 1 beaten egg

Instructions

  1. Cook cranberries with 1 cup sugar and water in a saucepan over medium heat for about 15 minutes until thickened. Let cool.
  2. In a mixing bowl, combine flour, remaining sugar, baking powder, and salt. Cut in butter until crumbly; add beaten egg and mix.
  3. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan. Pack half the crust mixture into the bottom of the pan.
  4. Pour cooled cranberry filling over the crust and sprinkle remaining crust mixture on top.
  5. Bake for about 40 minutes until golden brown. Cool completely before cutting into squares.
