  • 1 can diced tomatoes (14.5 oz), undrained
  • 4 cups vegetable or chicken broth
  • Fresh rosemary (1 sprig)
  • Fresh parsley (2 tablespoons), chopped
  • Olive oil (2 tablespoons)
  • Salt and black pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onions, carrots, and celery finely and mincing the garlic. Rinse the canned cannellini beans if using.
  2. In a large pot over medium heat, heat the olive oil. Add the chopped onions, carrots, celery, and minced garlic; sauté for about 5-7 minutes until softened.
  3. Stir in the diced tomatoes with their juice and add the broth. Bring to a gentle simmer.
  4. Add the cannellini beans, fresh rosemary sprig, and small pasta to the pot. Simmer for about 8-10 minutes until the pasta is tender but firm.
  5. Remove the rosemary sprig, adjust seasoning with salt and pepper as desired, then drizzle with olive oil before serving warm.
