- 1 lb chicken or beef sausage (mild or spicy)
- 1 medium onion (finely chopped)
- 2 cloves garlic (minced)
- 4 cups potatoes (peeled and diced)
- 4 cups chicken broth
- 1 cup heavy cream or half-and-half
- Salt and pepper to taste
- ½ tsp dried thyme
- 1 tbsp olive oil
- ½ cup shredded cheddar cheese
- Chop the onion and mince the garlic. Dice the potatoes into ½-inch chunks.
- In a skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant (about 3-5 minutes).
- Transfer sautéed onion and garlic to a slow cooker. Add diced potatoes, chicken broth, salt, pepper, thyme, and sausage. Stir to combine.
- Cover and cook on low for about 6 hours or high for about 3 hours until potatoes are tender.
- About 30 minutes before serving, stir in heavy cream and cheddar cheese until melted.
- Serve hot, garnished with fresh parsley or green onions.
