  • 1 lb chicken or beef sausage (mild or spicy)
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 4 cups potatoes (peeled and diced)
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • Salt and pepper to taste
  • ½ tsp dried thyme
  • 1 tbsp olive oil
  • ½ cup shredded cheddar cheese

Instructions

  1. Chop the onion and mince the garlic. Dice the potatoes into ½-inch chunks.
  2. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant (about 3-5 minutes).
  3. Transfer sautéed onion and garlic to a slow cooker. Add diced potatoes, chicken broth, salt, pepper, thyme, and sausage. Stir to combine.
  4. Cover and cook on low for about 6 hours or high for about 3 hours until potatoes are tender.
  5. About 30 minutes before serving, stir in heavy cream and cheddar cheese until melted.
  6. Serve hot, garnished with fresh parsley or green onions.
