2 cups all-purpose flour
1/4 cup granulated sugar
1/2 teaspoon salt
1 cup unsalted butter (cold and cubed)
1/2 cup cold water
1 teaspoon vanilla extract
1 cup chocolate chips
Instructions
In a large mixing bowl, combine flour, sugar, and salt. Add cold cubed butter and blend until crumbly.
Stir in cold water and vanilla extract until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
Roll out the chilled dough into a rectangle on a floured surface. Fold into thirds, roll out again, and repeat this process two more times for flakiness.
Preheat your oven to 375°F (190°C).
Cut the dough into triangles, place chocolate chips at the base, and roll from base to tip to shape croissants.
Bake on a parchment-lined baking sheet for 25 minutes or until golden brown.
