  • 3 lb boneless chuck roast
  • 3 lbs yellow onions
  • 2 cloves garlic, minced
  • 1 cup red apple vinegar or extra beef stock
  • 2 ½ cups beef stock
  • 1 tbsp extra virgin olive oil
  • 1 tbsp maple syrup or brown sugar
  • 1 tbsp all-purpose flour or gluten-free flour
  • 1/2 tsp fine sea salt
  • 1/2 tsp freshly ground black pepper
  • 2 tbsp extra virgin olive oil
  • 1 sprig rosemary
  • 1 bay leaf

Instructions

  1. Season the chuck roast with salt and pepper. Heat olive oil in a skillet over medium-high heat and sear the roast on all sides for about 4–5 minutes until browned.
  2. In the same skillet, add more olive oil if necessary and sauté sliced onions on low heat for about 30–40 minutes until caramelized. Stir in minced garlic, maple syrup (or brown sugar), flour, salt, and pepper.
  3. Transfer the seared roast and onion mixture to a slow cooker or Instant Pot. Pour in red apple vinegar (or beef stock) and beef stock, adding rosemary sprig and bay leaf.
  4. Cook on low for 6–8 hours in a slow cooker or on high pressure for 60–75 minutes in an Instant Pot followed by natural release.
  5. Remove the roast from the pot to rest before slicing against the grain and serving with caramelized onions spooned over.
