  • 1 1/2 cups crushed chocolate sandwich cookies

  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 2 tablespoons instant espresso powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a bowl, mix the crushed cookies and melted butter until combined. Press firmly into the springform pan and bake for 10 minutes. Let cool.
  3. In a mixing bowl, beat together cream cheese, sugar, and cornstarch until smooth. Add eggs one at a time on low speed.
  4. In another bowl, whisk heavy cream, sour cream, espresso powder, and vanilla until smooth. Gradually combine with the cream cheese mixture.
  5. Pour the batter over the cooled crust and wrap the pan in aluminum foil. Use a water bath method for even baking.
  6. Bake for 50-55 minutes until set with a slight jiggle in the center.
  7. Cool gradually in the oven with the door ajar, then chill in the refrigerator for at least six hours or overnight.
