  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 medium onion, diced
  • 4 oz turkey strips, chopped
  • 1 can whole plum tomatoes (28 oz)
  • 1 handful fresh basil
  • 2 bay leaves
  • 1 tbsp oregano
  • 3/4 cups ditalini pasta
  • 4 cups chicken broth
  • 1 can cannellini beans
  • 1 bag spinach, chopped
  • 2 tbsp olive oil
  • 2 tbsp tomato paste

Instructions

  1. In a large Dutch oven or pot over medium heat, sauté turkey strips until crispy (about 8 minutes). Add olive oil, carrots, celery, and onions; cook for 10 minutes until softened.
  2. Create a well in the center of the vegetables; add tomato paste and caramelize for about 3 minutes before stirring into the mix.
  3. Pour in crushed tomatoes, add basil, bay leaves, and remaining seasonings; bring to a simmer.
  4. Add chicken broth and parmesan rind; bring to a boil then reduce heat to simmer for 15 minutes.
  5. Stir in cannellini beans and ditalini pasta; continue simmering for another 15 minutes until pasta is tender.
  6. Add chopped spinach; cover and let steam for about 3 minutes before serving.
