  • 3/4 cup brown sugar (or coconut sugar)
  • 1 1/2 cups overripe bananas (mashed)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 3/4 cups gluten-free all-purpose flour (or regular flour)
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 cup white sugar
  • 2 tsp cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a mixing bowl, blend melted butter and brown sugar until smooth. Add mashed bananas, eggs, and vanilla; mix well.
  3. Incorporate gluten-free flour, baking soda, cinnamon, and salt until just combined.
  4. In a separate bowl, combine white sugar and cinnamon for the swirl topping.
  5. Pour half the batter into the prepared pan and sprinkle most of the cinnamon sugar mixture on top.
