  • 1 cup rolled oats (or oat flour)
  • 1 ½ cups mashed cooked sweet potato
  • ½ cup almond butter
  • ¼ cup honey
  • 3 large eggs
  • 1 tbsp ground cinnamon
  • 1 tsp baking soda
  • ½ tsp sea salt
  • 1 tsp coconut palm sugar (or brown sugar) for topping
  • 1 tsp ground cinnamon for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8.5" loaf pan with parchment paper.
  2. Blend rolled oats in a high-speed blender until they resemble flour.
  3. In a bowl, whisk together oat flour, cinnamon, baking soda, and sea salt.
  4. In the blender, blend wet ingredients: sweet potato, almond butter, honey, eggs, and vanilla extract until smooth.
  5. Combine wet and dry mixtures until just incorporated; do not overmix.
  6. Pour batter into the prepared pan and sprinkle topping mix of coconut palm sugar and cinnamon on top.
  7. Bake for about 50 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.
