  • 100 grams powdered sugar
  • 2 tablespoons unsweetened cocoa powder

  • 1/3 cup peanut butter
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a small pot over medium heat, create a double boiler by simmering water. Combine egg whites and granulated sugar in a bowl and place it over the steaming pot. Whisk until sugar dissolves.
  3. Transfer the mixture to your stand mixer and beat on high until stiff peaks form.
  4. Sift almond flour, cocoa powder, and powdered sugar into the meringue bowl and gently fold together until the batter flows smoothly.
  5. Pipe circles onto prepared baking sheets and tap to release air bubbles. Bake for about 13 minutes, allowing them to cool completely before removing.
  6. For the filling, mix butter and peanut butter until smooth; add powdered sugar, vanilla extract, and salt until fluffy.
  7. Assemble macarons by piping filling onto half of the shells and sandwiching with the other half.
