  • 3 ¼ cups bread flour
  • 1 cup cold whole milk
  • 2 ¼ tsp active dry yeast
  • ¼ cup granulated sugar
  • 1 tsp fine sea salt
  • 3 tbsp unsalted butter (softened)
  • 1 cup European-style butter (cold) for the butter block
  • 8 oz dark chocolate (chopped)

Instructions

  1. In a large bowl, mix flour, sugar, salt, and yeast. Add cold milk and softened butter; mix until shaggy dough forms. Knead for 5–7 minutes until smooth, then chill for at least 2 hours.
  2. Create a butter block by pounding cold butter between parchment sheets into a rectangle. Keep it cold.
  3. Encase the butter block in the chilled dough, roll out to about 10×20 inches, fold into thirds, and chill for 30 minutes. Repeat this rolling and folding process three times.
  4. Roll out again to cut triangles, fill with chocolate, roll tightly from base to tip, and let them proof for about 2–3 hours until puffy.
  5. Preheat oven to 400°F (200°C), brush croissants with egg wash, bake for 18–22 minutes until golden brown, then cool on a wire rack.
