  • 1 ½ lbs. yukon gold or red potatoes, cubed
  • 6 strips turkey bacon
  • 1 small yellow onion, diced
  • ¾ cup carrots, diced
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 5 cups chicken broth
  • 1 cup half and half
  • Salt
  • Pepper
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup flour
  • 1 teaspoon dried parsley
  • ½ teaspoon EACH: dried rosemary, oregano, mustard powder
  • ¼ teaspoon pepper
  • 1 pinch red pepper flakes
  • 1 ½ cups cheddar cheese (shredded)
  • Green onions (to garnish)

Instructions

  1. Cook turkey bacon in a pot over low heat; set aside.
  2. Season and sear chicken in the same pot until golden; let rest before chopping.
  3. Sauté onions, carrots, celery in drippings until softened.
  4. Add garlic and seasonings; stir well.
  5. Stir in flour; cook briefly.
  6. Gradually add chicken broth and half-and-half while stirring continuously.
  7. Incorporate cubed potatoes; simmer until tender (about 20 mins).
  8. Reduce heat; stir in cheddar cheese and reserved turkey bacon before serving.
