  • 1 lb boneless, skinless chicken breasts
  • 1 medium white onion, diced
  • 3 cups broccoli florets
  • 1 medium spaghetti squash
  • 1 jar Primal Kitchen Garlic Alfredo Sauce (or homemade)
  • Olive oil, garlic powder, salt, and pepper for seasoning

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the spaghetti squash in half lengthwise, remove seeds, season with oil and salt; place cut side down on a baking sheet.
  3. In a casserole dish, combine chicken breasts, diced onion, olive oil, salt, and pepper; toss to coat.
  4. Bake both dishes for 30 minutes.
  5. Remove from the oven; dice chicken and scrape spaghetti squash into the casserole dish.
  6. Add alfredo sauce and broccoli; mix well.
  7. Return to the oven and bake for an additional 30 minutes until golden brown.
