Ingredients

Scale
  • 12 oz (340g) pasta (spaghetti, fettuccine, or penne)
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil (for onions)
  • 1 tablespoon butter
  • 1/4 cup olive oil (for chili oil)
  • 1 tablespoon chili flakes
  • 1 garlic clove, minced
  • Salt and pepper

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium-low heat. Add thinly sliced onions and a pinch of salt. Stir occasionally for about 25-30 minutes until deeply caramelized.
  3. For the chili oil, combine 1/4 cup olive oil, chili flakes, and minced garlic in a small saucepan over low heat for about 5 minutes until fragrant.
  4. Add the cooked pasta to the skillet with caramelized onions, pour in the chili oil, and toss everything together. Adjust creaminess with reserved pasta water as needed.
  5. Season with salt and pepper to taste. Serve hot with optional toppings like chopped parsley or grated cheese.
