  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 2 tablespoons basil pesto
  • 5 cloves garlic (minced)
  • 1 cup sour cream
  • ½ cup fresh chopped basil
  • 8 ounces mozzarella cheese (cut into chunks)
  • 8 ounces provolone cheese (shredded)
  • ¼ cup grated parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish or cast iron skillet, combine cherry tomatoes with olive oil, basil pesto, minced garlic, salt, and pepper. Toss to coat and bake for 15 minutes.
  3. While the tomatoes roast, mix sour cream and chopped basil in a bowl. Stir in mozzarella, provolone, and parmesan.
  4. After roasting, add the cheese mixture over the tomatoes. Gently toss to combine and top with halved cherry tomatoes.
  5. Bake for an additional 20 minutes until bubbly and golden brown. Garnish with fresh basil before serving.
