  • 1.5 lbs boneless, skinless chicken breasts (cut into 1-inch cubes)
  • 2 lbs zucchini (cut into 1-inch cubes)
  • 1.5 lb tomatoes (sliced)
  • 9 oz fresh mozzarella cheese (thinly sliced)
  • 7 garlic cloves (minced)
  • 6 oz can low-sodium tomato paste
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Fresh basil (for garnish)

Instructions

  1. Preheat a large deep skillet over medium heat; add oil and chicken with salt and pepper. Cook for about 5 minutes.
  2. Move chicken aside, add garlic to the skillet, and sauté until fragrant.
  3. Stir in tomatoes, tomato paste, balsamic vinegar, oregano, remaining salt, and basil; cook for about 5 minutes.
  4. Add zucchini; cover and cook for another 12 minutes until tender.
  5. Top with mozzarella slices; cover again and simmer until cheese melts.
  6. Garnish with fresh basil before serving.
