  • 6 chicken tenders
  • ½ cup + 1 tablespoon balsamic vinegar
  • 2 tablespoons honey
  • 1 small yellow onion
  • 4 cups cherry tomatoes
  • 1 cup part-skim mozzarella pearls
  • Fresh basil leaves

Instructions

  1. Prepare the balsamic glaze by simmering ½ cup balsamic vinegar and 1 tablespoon honey in a small saucepan until thickened. Set aside.
  2. Season chicken tenders with salt, pepper, and lemon seasoning. In a cast iron skillet, heat olive oil over medium-high, then cook chicken until browned (about 4 minutes per side). Remove and set aside.
  3. In the same skillet, sauté diced onion and garlic until fragrant. Add halved cherry tomatoes along with thyme, remaining balsamic vinegar, honey, salt, and pepper; cook for about 2 minutes.
  4. Return chicken to the skillet, top with mozzarella pearls, cover to melt cheese for about 2 minutes. Drizzle with the remaining balsamic glaze and garnish with basil.
