  • 3 tbsp rice vinegar
  • 2 tbsp sugar

  • 4 oz imitation crab meat (or real crab)
  • 1 medium cucumber, sliced
  • 1 ripe avocado, diced
  • 2 tbsp low-sodium soy sauce
  • Sriracha (optional)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Cook the rice according to package instructions using a rice cooker or pot.
  3. Once cooked, transfer the warm rice to a mixing bowl and combine with rice vinegar, sugar, and salt.
  4. Slice cucumber into thin rounds and dice avocado.
  5. In serving bowls, layer seasoned sushi rice topped with sliced cucumber, diced avocado, and imitation crab meat.
