  • 1011 strips cooked chicken
  • 2 heads broccoli (1.5 pounds)
  • 1 cup dried cranberries
  • 1/3 cup roasted sunflower seeds
  • 1 cup shredded cheddar cheese
  • 1/3 cup chopped red onion
  • 1 & 1/4 cups Miracle Whip or mayonnaise
  • Zest and juice of 1 lemon
  • 2 tablespoons white grape juice vinegar
  • 1/4 cup sugar

Instructions

  1. Preheat your oven to cook the chicken strips until golden brown. Let cool and chop into bite-sized pieces.
  2. In a large mixing bowl, whisk together Miracle Whip or mayonnaise, lemon zest, lemon juice, white grape juice vinegar, sugar, salt, pepper, dry mustard, and cayenne until smooth.
  3. Chop broccoli into small florets and add to the bowl along with cranberries, sunflower seeds, cheddar cheese, red onion, and most of the chicken pieces. Mix well.
  4. Serve immediately or let it chill for about 20 minutes for enhanced flavors.
