  • 2 packages (6 ounces each) Driscolls Raspberries
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/4 cup orange juice
  • 2 slices sourdough or French bread
  • 2 tablespoons mayonnaise
  • 2 ounces Brie cheese, at room temperature
  • 4 slices manchego cheese, white cheddar cheese, or provolone cheese

Instructions

  1. In a small saucepan, combine raspberries, sugar, vanilla extract, and orange juice. Cook on medium heat until boiling. Reduce to medium-low and stir occasionally until thickened (about 15–20 minutes). Let cool.
  2. Spread mayonnaise on one side of each bread slice. Layer Brie on one slice followed by raspberry compote and additional cheese slices. Top with the second slice of bread (mayonnaise side out).
  3. Heat a skillet over medium heat and grill the sandwich until golden brown (4–5 minutes per side) and cheese is melted.
