  • 2 tablespoons olive oil
  • 1 onion (chopped)
  • 2 carrots (chopped)
  • 2 celery stalks (chopped)
  • 4 cloves garlic (minced)
  • 2 cups red apple vinegar (or beef broth)
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Heat olive oil in a Dutch oven over medium-high heat. Season short ribs with salt and pepper, then brown on all sides (3-4 minutes each). Remove and set aside.
  3. In the same pot, sauté onion, carrots, and celery until softened (5-7 minutes). Add garlic and cook for an additional minute.
  4. Deglaze the pot with red apple vinegar, scraping up browned bits. Stir in beef broth, tomato paste, thyme, and bay leaves; bring to a simmer.
  5. Return short ribs to the pot, cover with a lid, and braise in the oven for about 3 hours or until tender.
  6. Serve drizzled with sauce and garnished with fresh parsley.
