  • 1 cup light cream or half & half
  • 3 egg yolks
  • 1/4 cup granulated sugar
  • 1 1/2 tablespoons cornstarch
  • 34 croissants
  • 3 ounces semi-sweet chocolate
  • 1/4 cup light cream or half & half (for ganache)
  • Chopped nuts for garnishing

Instructions

  1. In a saucepan, whisk together granulated sugar, cornstarch, and a pinch of salt. Add egg yolks and mix until pale.
  2. Gradually incorporate light cream or half & half and cook over medium heat until thickened. Remove from heat and stir in butter and vanilla extract. Cool completely.
  3. Slice croissants to create pockets and fill generously with chilled pastry cream.
  4. For the ganache, melt chopped chocolate with light cream over simmering water until smooth. Allow to cool slightly before glazing the croissants.
  5. Drizzle ganache over each croissant and sprinkle with chopped nuts.
