  • 250 g digestive or graham crackers
  • 75 g butter
  • 800 g full fat cream cheese (room temperature)
  • 260 g granulated sugar
  • 300 g fresh blueberries
  • 4 large eggs
  • 200 g sour cream (18% room temperature)
  • 1 tbsp granulated sugar (for topping)
  • 1 tbsp all-purpose flour (for topping)
  • 2 tsp lemon juice
  • 110 g all-purpose flour
  • 80 g dark brown sugar
  • 1 1/2 tbsp cornstarch
  • 2 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 160°C (320°F).
  2. For the crust, combine crushed crackers and sugar in a bowl, mix in melted butter, and press into the bottom of a springform pan.
  3. For the blueberry topping, toss blueberries with sugar, flour, and lemon juice; set aside.
  4. In a large bowl, beat cream cheese until smooth; add sugars and mix until creamy.
  5. Add eggs one at a time, then mix in sour cream, cornstarch, and flour until just combined.
  6. Pour half of the cheesecake batter over the crust, layer half of the blueberry mixture on top, repeat layers.
  7. Bake for about 85 minutes or until the edges are set and center is slightly jiggly.
  8. Cool completely at room temperature before refrigerating for at least 4 hours.
