  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with 1 tbsp water
  • 1 cup heavy cream
  • 1 cup dark chocolate chips
  • 1 tsp dried culinary lavender
  • 1 tbsp unsalted butter
  • Fresh blueberries
  • Edible lavender flowers
  • Chocolate shavings

Instructions

  1. Preheat the oven to 350°F (175°C). Grease three 9-inch cake pans and line them with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, combine granulated sugar and vegetable oil. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Mix buttermilk with finely ground lavender and let it infuse for 5 minutes before combining with the wet mixture.
  5. Gradually add dry ingredients to wet ingredients while alternating with the buttermilk mixture. Stir in cooled coffee until smooth.
  6. Divide batter among prepared pans and bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool in pans for 10 minutes before transferring to wire racks to cool completely.
  7. In a small saucepan over medium heat, combine fresh blueberries, sugar, and lemon juice. Cook for about 5-7 minutes until blueberries begin breaking down, then stir in cornstarch mixture for thickening.
  8. Heat heavy cream in a saucepan until it simmers; remove from heat and stir in dried lavender. Let steep for 5 minutes before straining over dark chocolate chips. Allow it to sit for 2 minutes before stirring until smooth; then mix in butter for shine.
  9. Place one cake layer on a serving plate and spread blueberry compote on top. Add another layer of cake followed by more compote, finishing with the last layer on top.
  10. Pour warm lavender chocolate ganache over the entire cake allowing it to drip down sides beautifully.
  11. Decorate with fresh blueberries, edible lavender flowers, and chocolate shavings for an elegant finish.
