  • 56 medium sweet potatoes (peeled and cut into thin medallions)
  • ¼ cup unsalted butter
  • ¼ cup brown sugar
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup chopped pecans (or walnuts)
  • ½ cup mini vegan marshmallows

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Arrange sweet potato medallions in a baking dish.
  3. In a saucepan, combine butter, brown sugar, water, spices, and salt over medium heat. Stir until melted and smooth.
  4. Brush ¾ of the sauce over the sweet potatoes; cover with foil.
  5. Bake for 45-50 minutes until tender.
  6. Remove foil and drizzle remaining sauce over medallions; sprinkle with pecans and marshmallows.
  7. Broil for 1-2 minutes until marshmallows are toasted.
