  • 2 pounds Yukon Gold potatoes
  • 4 yellow onions
  • 2 tablespoons olive oil
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half (or dairy-free milk)
  • 1 teaspoon kosher salt
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Slice the onions thinly. Heat olive oil in a large skillet over medium heat and add the onions. Cook for 40-50 minutes, stirring occasionally until golden brown.
  2. While the onions caramelize, wash and chop the Yukon Gold potatoes. Boil them in salted water for about 20 minutes until fork-tender.
  3. Drain the potatoes and mash them while hot using a potato masher.
  4. Stir in warm butter, half & half (or dairy-free milk), kosher salt, and half of the caramelized onions along with grated Parmesan cheese until well combined.
  5. Serve topped with remaining caramelized onions and fresh herbs.
