  • 2 tablespoons softened unsalted butter
  • 1 1/4 cups chilled unsalted butter (for laminating)
  • 1 cup dark or semi-sweet chocolate bars or sticks
  • 1 teaspoon vanilla extract (optional)
  • 1 large egg (for wash)
  • 1 tablespoon milk (for wash)

Instructions

  1. In a large bowl, combine flour, sugar, salt, and yeast. Mix well.
  2. Add warm milk and softened butter; knead until smooth and elastic (about 8 minutes). Shape into a rectangle, cover with plastic wrap, and refrigerate for 30 minutes.
  3. Flatten chilled butter between parchment paper into a rectangle about half an inch thick; chill again if it softens too much.
  4. Roll dough into a rectangle twice the size of the butter block; place butter on one half and fold over to seal edges. Perform three to four folds with chilling in between.
  5. Roll out laminated dough into a rectangle (12×18 inches) and cut into rectangles (3×6 inches). Place chocolate at one end and roll tightly.
  6. Arrange on a parchment-lined baking sheet and let rise until puffy (1–2 hours).
  7. Whisk egg and milk; brush over croissants before baking.
  8. Preheat oven to 400°F (200°C) and bake for about 18–20 minutes until golden brown.
