  • 4 salmon fillets (6 oz each)
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • Zest and juice of ½ lemon
  • Salt and black pepper, to taste
  • 1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese
  • 1 tbsp fresh parsley, chopped (optional)
  • Cherry tomatoes or asparagus (optional for roasting)

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly oil a baking dish or line it with parchment paper.
  2. Pat the salmon fillets dry and place them skin-side down in the baking dish. Drizzle with olive oil, then season with salt, pepper, minced garlic, and lemon zest.
  3. Break the Boursin cheese into chunks and evenly distribute it over each salmon fillet.
  4. Bake for 15–18 minutes until the salmon is opaque and flakes easily; broil for the last 1–2 minutes for a golden top.
  5. Remove from the oven, squeeze fresh lemon juice on top, garnish with chopped parsley if desired, and serve immediately.
