  • 1/2 cup softened butter
  • 2/3 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk or almond milk (room temperature)
  • 2 large apples (peeled and chopped)
  • Optional glaze: powdered sugar and milk

Instructions

  1. Preheat your oven to 350°F and prepare a 9×5-inch loaf pan.
  2. Combine light brown sugar and cinnamon in a small bowl for the sweet swirl mixture.
  3. In a large bowl, cream together softened butter and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition, followed by the vanilla extract.
  4. In another bowl, whisk flour and baking powder together. Gradually mix into the wet ingredients, alternating with milk until just combined.
  5. Gently fold in the chopped apples.
  6. Pour half of the batter into the prepared pan, sprinkle half of the sweet swirl mixture on top, then add the remaining batter followed by the rest of the swirl mixture.
  7. Bake for about 55 minutes or until a toothpick inserted comes out clean.
