  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/3 cup apple cider
  • 1/3 cup fresh apple, peeled and grated

Instructions

  1. Preheat your oven to 325°F and line a 9 x 5 loaf pan with parchment paper.
  2. In a stand mixer, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition; then stir in vanilla.
  4. In another bowl, whisk together flour, baking powder, cinnamon, ginger, nutmeg, and salt.
  5. Gradually mix dry ingredients into the wet mixture, alternating with apple cider.
  6. Gently fold in the grated apples.
  7. Pour batter into the prepared loaf pan and bake for about 55 to 60 minutes or until a toothpick comes out clean.
  8. Allow cooling in the pan for about 15 minutes before transferring to a wire rack to cool completely.
