  • 4 large apples (2 Honeycrisp, 2 Granny Smith)
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1/4 cup melted butter
  • 2 tbsp cornstarch (dissolved in water)
  • 5 tbsp butter (for streusel)
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar (for streusel)
  • 1/2 tsp ground cinnamon (for streusel)
  • 1/4 cup melted butter (for icing)
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract
  • 1/21 tsp cinnamon (for icing)

Instructions

  1. Preheat your oven to 400°F and grease a muffin tin with softened butter.
  2. Press each cinnamon roll into the muffin cups to form cavities for filling.
  3. In a bowl, mix sliced apples with brown sugar, cinnamon, lemon juice, melted butter, and cornstarch mixture. Heat until thickened.
  4. Fill each roll with the apple mixture using a slotted spoon.
  5. Combine streusel ingredients until crumbly and sprinkle over filled rolls.
  6. Bake for about 15 minutes; cover loosely with foil for even cooking.
  7. Whisk icing ingredients together while rolls bake. Let cool briefly before drizzling icing on top.
