  • 1 cup powdered sugar for glaze
  • ½ teaspoon vanilla extract for glaze
  • 12 tablespoons apple cider for glaze

Instructions

  1. Reduce apple cider in a saucepan until it reaches about ¼ cup (59 ml); cool.
  2. Melt butter in another saucepan until browned; cool.
  3. Mix flour, baking powder, cornstarch, spices, and salt in one bowl.
  4. In a separate bowl, whisk brown butter with sugars; add egg, reduced cider, and vanilla.
  5. Combine wet and dry ingredients until just mixed; refrigerate dough briefly.
  6. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  7. Use a cookie scoop to place dough on sheets; bake for 9-11 minutes until edges are set.
  8. Cool on wire racks before glazing with cinnamon sugar.
