  • 8 day-old croissants
  • 1 cup almond flour
  • 2 tablespoons all-purpose flour
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • ½ cup unsalted butter, room temperature
  • ½ teaspoon almond extract
  • 2 eggs, room temperature
  • 1 cup (240 ml) water
  • ¼ cup (50 g) granulated sugar
  • 4 tablespoons (60 ml) vanilla extract (alcohol-free)
  • 1 teaspoon vanilla extract
  • ¼ cup sliced almonds (for topping)
  • ¼ cup (30 g) powdered sugar (for topping, optional)

Instructions

  1. Preheat oven to 350 F (177 C) and line baking sheets with parchment paper.
  2. In a saucepan, combine water and sugar to make simple syrup; simmer until dissolved. Stir in vanilla extract and let cool.
  3. In a stand mixer, mix almond flour, all-purpose flour, salt, and sugar. Add butter, eggs, and almond extract; whisk until fluffy.
  4. Slice croissants in half; brush inside with syrup and spread almond filling on bottom halves before placing tops back on.
  5. Brush tops with syrup, add more filling if desired, and sprinkle with sliced almonds.
  6. Bake for 15-18 minutes until golden brown; cool slightly before dusting with powdered sugar.
