  • 2 tsp italian seasoning
  • 1 tsp kosher salt
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp ground pepper
  • 12 tbsp olive oil
  • 34 medium ripe tomatoes (about 1 lb) (cored, seeded, and chopped to a ½” dice)
  • 1 tsp kosher salt
  • 2 cloves garlic (minced)
  • 1 tbsp extra virgin olive oil
  • 2 tsp balsamic vinegar
  • 2 tbsp thinly sliced basil leaves
  • ground pepper (to taste)
  • balsamic glaze (to taste, optional)

Instructions

  1. Combine chopped tomatoes with salt and minced garlic in a mixing bowl; set aside.
  2. Pound chicken breasts between parchment paper to an even thickness of about 1 inch.
  3. Brush chicken with olive oil and season both sides with Italian seasoning, salt, onion powder, garlic powder, and pepper.
  4. Grill chicken over high heat for 5-6 minutes per side until cooked through (165°F) or bake at 400°F for 10-12 minutes.
  5. Mix olive oil, balsamic vinegar, basil, and pepper into the tomato mixture; adjust seasoning as needed.
  6. Top each chicken breast generously with bruschetta topping before serving.
